260g Hazelnut Butter
4 tbsp honey (or maple syrup for vegan cookies)
6 tbsp ground flaxseed mixed with 3/4 cups warm water
1/3 cup coconut flour + 1 Tbsp
1 full tsp baking soda
1 tsp vanilla extract
1/2 cup coarsely chopped roasted hazelnuts


  1. Grind flax seeds with a blender until the flax is powder
  2. Add to the flax seeds warm water and set aside for 10 minutes.
  3. In a bowl add all the ingredients one by one (including the flax seeds) and mix well.
  4. Preheat the oven to 180° C.
  5. Using an ice cream scoop or a spoon, divide the mixture into 10 equal biscuits. Leave some space in the tray between them, because they will expand.
  6. Bake for 20 min to 180° C.
  7. Remove from the oven and let them cool down.
