Wild Hazelnut Cookies

260 gr Hazelnut Butter
4 tbsp Wild Flower Honey from Mount Olympus

1 tsp vanilla extract
6 tbsp ground flax-seed (mixed with 3/4 cups warm water)

1/3 cup coconut flour + 1 Tbsp
1  tsp baking soda

1/2 tsp salt
1/2 cup coarsely chopped Roasted Hazelnuts


  1. Grind flax seeds with a blender until the flax is powder
  2. Add to the flax seeds warm water and set aside for 10 minutes.
  3. In a bowl add all the ingredients one by one (including the flax seeds) and mix well.
  4. Preheat the oven to 180° C.
  5. Using an ice cream scoop or a spoon, divide the mixture into 10 equal biscuits. Leave some space in the tray between them, because they will expand.
  6. Bake the cookies for 20 minutes.
  7. Remove from the oven and let them cool down.
