Salad with Raw Broccoli and Hazelnuts

INGREDIENTS
Solid:
370 g chopped raw broccoli
50 g chopped raw red onion
80 g chopped strawberries
150 g chopped raw zucchini that we have removed the seeds from
120 g raw black rice
For the dressing:
50 g Hazelnut Butter
35 g olive oil
45 g apple cider vinegar
40 g Forest Fruits Jam or Strawberry Jam
Sea salt & freshly ground black pepper
For serving:
50 g coarsely chopped Roasted Hazelnuts
Instructions
- Boil the black rice (depending on the package) until it softens.
- Cut both the florets and the stalk of the broccoli into small uniform pieces, finely chop the red onion, the zucchini and the strawberries.
- Mix all the vegetables and the cooked rice in a large bowl.
- Leave to the side until you make the dressing.
- To make the dressing, whisk all the ingredients together and pour over the salad.
- Serve with coarsely chopped hazelnuts.
- The salad can be served immediately, but it is much tastier if it has had time to cool and marinate in the refrigerator (at least 30 minutes / 1 day).
