INGREDIENTS

Solid:

370 g chopped raw broccoli

50 g chopped raw red onion

80 g chopped strawberries

150 g chopped raw zucchini that we have removed the seeds from

120 g raw black rice

For the dressing:

50 g Hazelnut Butter 

35 g olive oil

45 g apple cider vinegar

40 g Forest Fruits Jam or Strawberry Jam 

Sea ​​salt & freshly ground black pepper

For serving:

50 g coarsely chopped Roasted Hazelnuts  

Instructions 

  1. Boil the black rice (depending on the package) until it softens.
  2. Cut both the florets and the stalk of the broccoli into small uniform pieces, finely chop the red onion, the zucchini and the strawberries.
  3. Mix all the vegetables and the cooked rice in a large bowl.
  4. Leave to the side until you make the dressing.
  5. To make the dressing, whisk all the ingredients together and pour over the salad.
  6. Serve with coarsely chopped hazelnuts.
  7. The salad can be served immediately, but it is much tastier  if it has had time to cool and marinate in the refrigerator (at least 30 minutes / 1 day).
