Pumpkin Soup with Tahini Linseeds

Ingredients
Liquid:
2 tbsp Sesame Oil
1 liter vegetable stock, ideally home made
2 tbsp Tahini with Linseeds (40g)
Solid:
1-1.5 kg pumpkin
5 carrots, peeled and finely chopped
1 big onion, finely chopped
1 tsp ginger
1 tsp turmeric
2-3 garlic cloves (optional)
Salt and pepper
Instructions
- Remove the inside of the pumpkin and cut in pieces.
- Lightly sauté the onion, garlic, ginger, and turmeric and then add the carrots, pepper, and
- pumpkin.
- Afterwards, add the vegetable stock and the seasoning. If necessary, add extra water so the
- veggies are covered.
- Cook over low heat for 40 minutes.
- Check if veggies are fully cooked and add Tahini.
- Blend until creamy smooth.
