Chocolate Muffins with Vanilla Frosting

INGREDIENTS
130 ml Plant-based milk
100 g all purpose flour
50 g olive oil
20 g carob flour
4 tbsp Hazelnut butter
1 ripe banana
1 tbsp baking powder
For the frosting:
1/2 cup Cashews
50 ml Plant-based milk
2 tbsp Cashew Butter with Madagascar Vanilla
1 tbsp Maple syrup
INSTRUCTIONS
- Mash the banana very well.
- In a bowl, mix olive oil, hazelnut butter, melted banana and milk.
- In another bowl, put the flour, carob flour, baking powder and mix well.
- Slowly pour the solids mixture into the liquid mixture and mix well until incorporated.
- Transfer the mixture to muffin tins and bake in a preheated oven at 180 degrees with air for about 30 minutes.
- For the frosting, soak the cashews overnight or for 20 minutes in warm water.
- Drain well, transfer them to a powerful blender with the rest of the ingredients and mash until they become creamy.
- If we want to color it, we mix it with some natural color powder, for example beetroot powder, turmeric, matcha.
- Put the cream in a cornet and transfer it to the fridge for 10-15 minutes to firm up.
- We decorate our cupcakes with whatever shape we like!
