INGREDIENTS

For the sauce:

4 cloves of garlic, finely grated
2 tsp sweet chili flakes
2 tsp sweet paprika
2 tbsp sesame
2 tsp dry coriander powder
Zest of a lemon
1 tsp freshly ground pepper
180 ml sesame oil or sunflower oil
60 g Almond butter
6 tbsp soy sauce
2 tsp brown or coconut sugar
2 tsp apple cider vinegar

For the noodles:

1 onion, thinly sliced
3 spring onions, finely chopped
500 g various mushrooms, cut into medium pieces
30 g Almond butter
500 g linguini, boiled
Sesame oil or sunflower oil
Salt & freshly ground pepper

For serving:

Fresh onions
Salted & roasted almonds, coarsely broken
¼ bunch fresh coriander (the leaves)
