INGREDIENTS

Liquid:

2 tbsp olive oil

1.5 L of water

Solid:

100 g onion

300 g lettuce

270 g white or brown mushrooms

30 g chopped dill

100 g fresh onion

230 g leek

100 g brown rice

1/2 tsp salt

A little black pepper

For the cashew-lemon dressing:

85 g Cashew Butter 

130 g lemon juice 

100 g soup stock

Instructions

  1. Chop all the vegetables.
  2. Rinse the rice.
  3. In a large pot, saute the onions and leek until soft for 5 minutes.
  4. Put the mushrooms in the pot and let them wilt for 5 minutes. At this time we also add the salt.
  5. When the vegetables have wilted, add the rice and water.
  6. Boil for 5 minutes, add the chopped lettuce and dill and cook on medium heat for 40 minutes until the rice is soft.
  7. Turn off and remove from heat.
  8. We take 100g of the soup stock and beat it together with the lemon and cashew butter.
  9. Pour the mixture into the pot and taste to see if it needs a little salt or pepper.
