Magiritsa with Mushrooms and Cashew-lemon dressing

INGREDIENTS
Liquid:
2 tbsp olive oil
1.5 L of water
Solid:
100 g onion
300 g lettuce
270 g white or brown mushrooms
30 g chopped dill
100 g fresh onion
230 g leek
100 g brown rice
1/2 tsp salt
A little black pepper
For the cashew-lemon dressing:
85 g Cashew Butter
130 g lemon juice
100 g soup stock
Instructions
- Chop all the vegetables.
- Rinse the rice.
- In a large pot, saute the onions and leek until soft for 5 minutes.
- Put the mushrooms in the pot and let them wilt for 5 minutes. At this time we also add the salt.
- When the vegetables have wilted, add the rice and water.
- Boil for 5 minutes, add the chopped lettuce and dill and cook on medium heat for 40 minutes until the rice is soft.
- Turn off and remove from heat.
- We take 100g of the soup stock and beat it together with the lemon and cashew butter.
- Pour the mixture into the pot and taste to see if it needs a little salt or pepper.
